A great one day food smoking course, this experience is a practical, hands-on introduction to smoking your own food! The course covers the basic theory of food smoking including both hot and cold smoking. Throughout, you will learn how to construct and use a cold smoker, how and where to source your wood, brining and salting salmon, producing smoke, the principals of combustion and so much more. You will smoke six types of food including smoked salmon, and you'll even get to hot smoke a trout - which, I'll bet, is something you never thought you'd be able to say to anyone.

What do I need to know?
  • Minimum age is 16
  • Courses take place on selected Saturdays between 10am and 4.30pm; please contact the supplier before booking to confirm availability for your chosen date
  • All dates are subject to availability
  • Smoking food can at times be a smelly business and you may be exposed to wood smoke, so please don't wear your best clothes
  • Parts of the course are outside in the open so ensure you wear appropriate clothing for the weather on the day
  • Lunch provided consists of homemade soup and is suitable for vegetarians
  • If you are interested in taking food smoking up as a hobby, your host has a range of wood dusts, chips and smokers available on site for you to purchase

Brilliant Day

This course provides you with all the knowledge you need to start cold or hot smoking at home, answering all the questions you have as you go along in a friendly and well paced learning environment. I left this course feeling massively inspired, and have since produced results that both I and my family are extremely happy with (and just in time for the festive period!). Well worth a journey, highly recommended.

when i got given the cold smoking day course i didnt really know what to expect, i know i love smoked cheese and smoked salmon etc and love cooking but wasnt sure what to make ofthis course and if i would be able to use it in my everyday life??? we arrived at the location on a gorgeous sunny morning and it looked like we had a nice small group of people the course was run by Turan and his wife who were both lovely and welcoming and offered us tea & coffee on arrival. we first all went round telling everyone a bit about ourselves and what our fav smoked foods are it soon became apparent that most of us loved smoked cheese and fish but Turan soon showed us a huge array of varied food that we would be cold smoking including nuts, various cheeses, bread, olive oil, olives, eggs, chorizo, sun dried tomato and more!! we also were given the oppertunity to learn how to smoke salmon and trout. the first order of the day was to learn about health and safety and then the history and principles of cold smoking and looked at all the varied smokers and ways to go about it! we then got down to the practicle side of things and began smoking!! we were very lucky it was a warm sunny day and a pleasure to be outside learning the different technics and trying out different methods from a smoker made from an old cardborad box, which proved anyone could start smoking food! to a fab ready to puttogether cardboard eco smoker you can easily buy and essemble yourself and a proper stacked smoker for the salmon. we then saw all the different types of wood, dust and chips used to smoke the foods and had a chance to smell and touch them and really see what a diffrence different woods could make. we then all had a lunch break of soup and bread with a chance to use a hand held smoker to smoke our soup if we wished, of course i had to try it and it was good! The rest of the afternoon was taken up with checking on our different smoking techinecs and hot smoking the salmon in a hot smoker and we also smoked trout over chips and then various nuts which were al amazing!! at the end of the day we broufght all the smoked food we had prepared through out the day and sampled it all and took lots of pictures as it looked amazing!! Turan then showed us all the bits and pieces we could buy that day so we could then go ahead and put the things we had learnt to good use! he also gave us information on how to get plans etc from his website. All in all it was a fantastic day and a great experience and would recommend to anyone!!
