These delicious spirits are made with local ingredients to give you a taste of the Irish countryside and distilled using an innovative process, which was invented by the founder, Dr Ulrich Dyer. Upon arrival, you’ll be welcomed by Dr Dyer himself, who will guide you on this exciting distillery tour. You’ll explore the laboratory and gin school and will learn all about the unique production methods, which are based on cold distillation and microwave-extraction technology. These bespoke techniques retain fantastic flavours which are often lost during traditional distillation.
